Our concept of farmhouse has its foundations in our kitchen garden. Our other pillar is the breeding of courtyard animals: chickens, ducks, geese and rabbits. The animals stay outdoors, in large spaces, where they can lead an absolutely natural life with all the time to grow without the stresses that intensive breeding entails. Even the eggs we use for handmade pasta come from our chicken coop and before you feel the flavor, just look at the almost orange color that they give the doughs to understand that these are superfine raw materials…
